Whole GrainsThe term whole grain refers to grains, which are still in their natural form. Whole grains have a bran, germ and endosperm. To be considered a whole grain, the entire grain must still be intact and not just the endosperm, as is the case in refined grains. By eliminating the germ and the bran, refined grains lose significant health benefits.

Flours labeled “wheat, enriched wheat, unbleached or bleached wheat” ARE NOT whole grain or whole-wheat flours. Wheat, enriched wheat, unbleached or bleached wheat flours, as well as any other grain flour not identified as being 100% whole grain flour, are refined, processed flours.

During the refining process the germ and bran are removed. These are the most important components of the wheat or other grain flours. In the refinement of these flours about 30 nutrients are removed, but by law only 5 must be added back; iron, niacin, thiamin, riboflavin and folic acid.

These refined, processed flours are primarily made from the endosperm (the starchy part of the kernel in between the outer layered bran and innermost germ).

The GERM is the heart of the kernel, the embryo of the seed. The germ is the reproductive part that germinates and forms the wheat grass or other cereal kernels. The germ is the center and most nutritional part of the kernel. It includes vitamin E, folic acid, phosphorous, thiamin, riboflavin, zinc magnesium and calcium. It is a good source of vitamins A and B1 and B3. It contains more potassium and iron than any other food source. It also contains fiber and is very high in protein.

The BRAN is the outside layer of the kernel referred to as the husk. It contains the most fiber and protects the inner parts of the kernel. It is also rich in omega, protein, vitamins and dietary minerals, making them compact nutritional powerhouses.

By keeping the entire grain intact, the whole grain retains more nutritional benefits than processed grains. One of the primary benefits of whole grains is the high fiber content. A fiber rich diet has been linked to reduction in certain cancers, especially colon cancer, diabetes, digestive problems and heart disease.
